These roasted acorn squash are filled with a pilaf of quinoa seasoned with dried cranberries, sautéed red onions, pecans and Mama Francesca Parmesan, Basil & Oregano.
Suggestion:Get some green into your diet by adding 2 cups of shredded kale to the recipe.

4 Acorn Squash, halved lengthwise and seeds removed
1 Red Onion, diced and sautéed
¾ cup Cranberries
1 cup Chopped Pecan Pieces
2 cups Cooked Quinoa
