Apple-Curry Cauliflower Soup

Serves 6-8

Cauliflower is blended with Mama Francesca Parmesan & Garlic, apples and curry powder to make a velvety soup.

Suggestion: Serve with crusty bread to mop up your bowl.

Ingredients

1 cup Mama Francesca Parmesan & Garlic
3 Tbsp. Butter
1 Medium-Sized Onion, diced
1 head Cauliflower, cut into florets
2 Apples, peeled, cored and diced
2 Tbsp. Curry Powder
1 tsp. Salt
2 Tbsp. Apple Cider Vinegar
2 Tbsp. Honey
3 cups Vegetable Stock
3 cups Heavy Cream

Directions

  1. Melt the butter in a large soup pot over medium heat.
  2. Add the onion, cauliflower, apples, curry and salt. Cook for 10 minutes, or until the vegetables are fork tender.
  3. Add apple cider vinegar, honey, stock and cream into the pot. Reduce the heat to low and let simmer for 30 minutes.
  4. Add Mama Francesca Parmesan & Garlic to the soup.
  5. Puree soup with an immersion blender until smooth. Serve hot.
