Mama may not have had the technology we do, but she knew how to prepare the perfect pesto without a blender. As she dug out her heavy mortar and pestle, she would exclaim, “A chi voule, non maneano modi.” (“Where there is a will, there is a way.”) Crushing nuts, fresh herbs, olive oil and Parmesan in the abrasive bowl always brought a smile to Mama’s face, knowing the dazzling pesto was worth the labor.
Fresh basil, toasted almonds, imported extra virgin olive oil, Mama Francesca Classic Parmesan and garlic are combined for a mouth-watering spread for bread or a dressing for roasted vegetables.
Suggestion: Add ¼ cup of sun-dried tomatoes for a unique twist!
