In late summer, you could always find Mama in her garden tending to her tomatoes like they were bambinos of her own! Sometimes, if you listened carefully, you could hear Mama singing softly, “Fa la ninna, fa la nanna. Nella braccia della mamma. Fa la ninna bel bambin." (“Go to sleep, go to sleep…”) She would tell you it made them grow bigger and more beautiful — Mama always had the best bruschetta.
Chopped tomatoes, onions and basil are tossed with pine nuts, dried cranberries and Mama Francesca Parmesan, Basil & Oregano. Serve on grilled bread with a drizzle of balsamic reduction.
Suggestion: Let your bruschetta marinate for an hour before serving, letting the flavors meld together.

1 Baguette, sliced and toasted
