Mama gives onion rings a bit of sophistication with Mama Francesca Parmesan, Asiago & Romano. Thick-cut onions are dipped in batter flavored with parmesan and champagne, then fried until golden brown.

2 cups Mama Francesca Parmesan, Asiago & Romano
2 Large Yellow Onions, peeled and cut into ½-inch–thick slices and separated into rings
½ cup Cornstarch
2 cups All-Purpose Flour
2 Egg Yolks
12 oz. Champagne or Sparkling Wine
1 Tbsp. Chopped Chives
1 Tbsp. Kosher Salt
2 tsp. Honey
6 cups Canola Oil, for frying
