When it comes to salad, Mama always tossed greens picked fresh from her garden, but then made us wait while she created homemade croutons. After all, she said, “Questo è ciò che ci separano dai coniglietti.” (“This is what will separate us from the bunnies.”)
Creamy goat cheese, Mama Francesca Parmesan & Red Pepper and cream cheese are blended together, crusted in panko and fried golden brown. Top with simple greens dressed with a vinaigrette.
Suggestion: These can be served with roasted vegetables over them as well!
