This salad may not have originated in Italy, but Mama knew the Italians perfected it. Simply roasted beets tossed with oranges, toasted hazelnuts, a pinch of the perfect Mama Francesca Parmesan & Romano and peppery baby arugula won the hearts of many!
Suggestion: Add grilled shrimp to make it an entrée!
½ cup Mama Francesca Parmesan & Romano
2 cups Plain Greek Yogurt
2 lbs Beets, roasted, peeled
2 Oranges, segmented
¼ cup Infused Olive Oil (recipe)
3 Tbsp. Hazelnuts, toasted, chopped
1 cup Arugula
