Suggestion: For a healthier version, try serving this sauce over roasted vegetables, such as zucchini, mushrooms and bell peppers, instead of the ravioli.
½ cup Mama Francesca Parmesan, Asiago & Romano
5 Tbsp. Salted Butter
1 Tbsp. Minced Garlic
¼ tsp. Ground Nutmeg
¼ cup Flour
3 cups Vegetable Stock
1 (8 oz.) brick Cream Cheese, cut into cubes
1 (16 oz.) can Artichoke Hearts, chopped
4 cups Fresh Baby Spinach
1 (4 oz.) jar Pimentos, with juice
2 lbs. Cheese Ravioli or Tortellini, cooked according to package directions
