With wine flowing, guests chattering and the anticipation of Mama’s famous kale salad becoming unbearable, it was finished. Mama would erupt from the kitchen with a smile on her face, knowing she kept her family waiting just long enough for their mouths to be watering over the fragrant dish being prepared.
Kale is wilted with white wine, garlic and onions, then served warm with pine nuts, chili flake and Mama Francesca Parmesan, Basil & Oregano. Top with a thin slice of crispy Italian bread and enjoy!
Suggestion: Spinach can be substituted for kale. Cook for half of the time.
3 Tbsp. Mama Francesca Parmesan, Basil & Oregano
1 bunch Kale, washed, roughly chopped
2 Tbsp. Extra Virgin Olive Oil
1 Tbsp. Garlic, minced
1 small Red Onion, sliced
2 Tbsp. Pine Nuts, toasted
1 Tbsp. Red Wine Vinegar
Pinch Chili Flake
To Taste Salt and Pepper
